Like every good south Indian foodie I too love Uddin Vade (Medu Vada). Growing up my mom would hesitate to make these along with idli simply because every one at home would ditch idlies for these vadas! These are a hit with my kids too and thus I had to learn to make them. 

The ingredients are straight forward and simple for the dough, however, getting the shape right is a whole different story! Don't get discouraged, go on and try it out..😀!

Disclaimer: I have had plenty of failed attempts but not once was the dough wasted, you can simply take a big spoon and drop spoonfuls of dough in the oil and the results are absolutely delicious vadas every time, minus the perfect shape of course! And you can use these to make delicious dahi bhalle!

Recipe and a pictorial guide

1) soak 2 cups of urad dal overnight or at least for 6 hours

2) strain the water out and grind the soaked Dal with 1 inch ginger,  2 green chillies, add very little water (only if needed) 
Prepared airy light dough
3)the dough has to be very smoothe, use your hand and nicely whisk the batter for at least 5-7 minutes to make it light and airy 4)to this add chopped curry leaves and coriander leaves,  finely chopped coconut pieces, 
5) dry roast 1 teaspoon cumin(jeera) seeds, black pepper and coarsely blend and add to dough along with salt to taste and mix well 6) all the above additions to the dough is optional and you can keep it plain as well 
7) the main step which you should not miss is to whisk this dough to incorporate air which will make the vada light and crispy ( step 3)! 
8) wet your hands in water, shape these vadas making a hole in the center and drop it in oil and fry until golden colour..

9)Serve with sambar,  chutney or make delicious dahi vada/ dahi bhalle!
