Pasta Al Pomodoro

Pasta Al Pomodoro

The fresh herbs from last evening prompted me to make some delicious Pasta Al Pomodoro for dinner.  This is such a simple recipe which gets done in a jiffy and is great for a light summer dinner. I always feel the best tasting dishes have minimal ingredients and this one is such! Here is the recipe 👇🏼
Pasta Al Pomodoro 

Recipe

1) boil water in a big utensil add a little salt and a few drops of oil,  now cook your pasta about (200 gms) in this water, as per packet instructions., keep it Al dente. Please reserve a little pasta water for later.,  (I have used penne and fusilli, you can use any)
2) in a pan take olive oil about 3 tablespoons, add a finely chopped white onion and fry until translucent 

3)add 3 finely chopped garlic pods and fry
4) add blanched, peeled and chopped tomatoes to this (the plum variety is the best, if using canned look for the ones in glass bottles with whole tomatoes made in Italy)
5) chop up some fresh basil leaves, and add
6) add pepper,  salt to season
7) add the pasta and 2-3 tablespoons of the reserved pasta water and let it cook for another 2-3.minutes , until done
8) drop a dollop of butter now to make it creamier
9) serve,  garnish with fresh basil and parmigiano reggiano or any grated cheese of your choice. 10) since I used two different pastas.. I added bacon into one and the other was a classic pasta al pomodoro.
