Pundi / Akki tari kadubu

- this no oil recipe makes for a very healthy breakfast. You can pair it with chutney, kadla (chickpeas) curry or chicken curry 🙂. This dish has many variations and is known by different names, all over karnataka.
Recipe:
1) dry roast 1 cup Rice Rava (akki tari) until you get a lovely fragrance , the colour shouldn't change
2) in a pan take 2 cups water (Rava, water 1:2 ratio) add - jeera, curry leaves chopped, coriander leaves chopped, ginger finely chopped, dill finely chopped (sabsige soppu) green chilli finely chopped (I have added red chilli), salt per taste, grated coconut half cup and let it all boil
3) now turn down the flame to slow and add roasted rice rava mix well and close the lid of the pan as it splutters a lot.
4) in 5-7 mins remove the lid and mix the contents on slow flame and switch the stove off.
5) keep your steamer ready with hot water, grease the plate with ghee and shape the pundi's into lemon sized balls and steam for 10-12 mins.

6) Pundi is ready to be served with chutney
7) you can also make plain white ones for non-veg curries - add only grated coconut and salt in the water and mix the rice rava ,follow step 3,4,5.

8) Alternatively, you can stuff the plain white ones with coconut and jaggery for sweet pundi.
Pudina Chutney (mint chutney)
Ingredients
1) Pudina leaves 1 bunch
2) green chillies - 4
3) coriander leaves - half a bunch
4) curry leaves - 1 handful
5) 1 cup of
coconut,
6) little tamarind ( size little bigger than a pea)
7)garlic 4-5
8) onion - half
9) and a handful of puttani (roasted Chana dal)
Method
- grind in the mixer and add salt per taste and its ready.
