Khaman Dhokla

Khaman dhokla - these easy to make savoury cakes are so light and fluffy and they go well with a mint chutney.
Here is the recipe 👇🏼

Khaman Dhokla Recipe

1) keep your steamer on the stove and let the water simmer.
2) sieve 1 cup besan (gramflour) to this add 1 tablespoon semolina (rave), 
3) 1 spoon ginger-greenchilli paste, half spoon turmeric powder, half spoon roasted jeera powder, 1 spoon vegetable oil, salt as per taste mix well.
4) add 1 cup water and whisk until smoothe (try to incorporate air while whisking).
5) once smoothe squeeze 1 lemon into this and whisk again.
6) add 1 tablespoon fruit salt (eno) to this and a little water and whisk vigorously... The batter bubbles and rises.. Immediately pour into a greased plate and steam for about 8-10 mins
7) while the dhokla is steaming we have 3 things to make
- A) in a small pan add half a cup water and 2 tablespoon sugar and let it dissolve, once sugar dissolves switch off
_ B )chop fresh coriander leaves and grate fresh coconut for garnishing
- C) make a tadka (tempering) of oil -mustard seeds- white till seeds (curry leaves,  green chillies, hing is optional - I have skipped)
8) take a fork and make quick holes in the steamed dhokla and use a spoon to add in the water-sugar mixture, 1spoon at a time ( once absorbed add again and so on)
9) now add the hot tadka on top spread it over smoothly and finally garnish with fresh coriander leaves and grated coconut
9) cut into pieces and serve

Alternatively

1) if you want to avoid fruit salt (eno) you can use curds to mix the dough in place of water (specially sour curds) and set aside for an hour or two so it ferments a bit and dough rises. I have tried that method too and you will get the same spongy dhoklas.
2) many of them use citric acid crystals instead of lemon juice ...again result will be the same might as well use natural ingredients

Tips:

1) whisk well to incorporate air
2) use a plate 6 to 7 inches in diameter, avoid bigger plate
3) whisk in ENO just before steaming (as per recipe)
4) make sure your steamer is steaming away when you place your plate with the batter in.

Pudina Chutney (mint chutney) 

Ingredients 
1) Pudina leaves 1 bunch
2) green chillies - 4
3) coriander leaves - half a bunch
4) curry leaves - 1 handful
5) 1 cup of 
 coconut, 
6) little tamarind ( size little bigger than a pea)
7)garlic 4-5
8) onion - half
9) and a handful of puttani (roasted Chana dal)

Method
grind in the mixer and add salt per taste and its ready.

Fluffiest Dhokla
