- These golden delights make for a super yummy breakfast and are known by different names all across southern India including paddu, appe, guliappa, gulittu, yeriyappa, gundponglu, ponganalu. These could be made savoury or sweet... I will share the sweet version with recipe sometime soon!
Many other cultures around the world make these too, but of course with a little variation. When you travel around South East Asia you will be pleasantly suprised by so many variations of this dish both sweet and savoury ones! You can look up 👇🏼these to get an idea 😀

You get a special moulded pan to make these in.. and the savoury ones are made using the same dosa batter from my previous post.,
Dosa Batter Recipe
Dosa Batter Recipe
Ingredients:
1) 3 cups rice (dosa rice),
2) 1 cup of all these lentils mixed together (Urad dal, Toor dal, Moong dal, Chana dal)
3) 1 teaspoon fenugreek seeds,
4) and a handful of poha
Method
1) First step soak all the above (1,2,3 & 4) for 6-8 hours and grind it to a fine paste.
2) Add salt to this batter, mix well and let it ferment overnight in a warm place like your oven or microwave or if its summer then on kitchen counter top will do!
3) your batter is fermented and ready to use in the morning.
Paddu Recipe :
1) fry 3 finely chopped onions and 3 finely chopped green chilli's in 1 tablespoon oil until onions are translucent and let it cool down, once it cools down mix it into the dosa batter
2)add finely chopped coriander leaves and curry leaves into the dosa batter and mix well
3) now heat the pan and add a few drops of oil into all the wells and pour in the batter cook for 2-3 mins, flip them around and cook evenly.
4)serve with coconut chutney !

1) freshly grated coconut 1 cup
2) a little tamarind ( size of peanut)
3) roasted Channa dal 1 tablespoon (puttani),
4) green chilli -2 numbers
5) salt, ginger half inch and water as needed
Method - blitz all ingredients in a mixer and ready!
