                             Masala Dosa 

- this is undoubtedly the most popular south Indian delicacy and again every household has their own preferences and variations. This one is more of an emotion for all south Indians ❤ So here is the recipe👇🏼

P.S. there are many components to bring this dish together, i have listed and provided the recipe for each of the component.

All the components ready 
Recipe

Dosa Batter - this batter is slightly different from the other dosa batters in my previous posts.

Ingredients:
1) 3 cups rice (dosa rice),  
2) 1 cup of all these lentils mixed together (Urad dal, Toor dal, Moong dal, Chana dal)
3) 1 teaspoon fenugreek seeds, 
4) and a handful of poha 

Method
1) First step soak all the above (1,2,3 & 4) for 6-8 hours and grind it to a fine paste. 
2) Add salt to this batter,  mix well and let it ferment overnight in a warm place like your oven or microwave or if its summer then on kitchen counter top will do! 
3) your batter is fermented and ready to use in the morning.

Aloo masala 
1) boil 4 large potatoes and peel the skin and mash them 
2) in a wok add 1 tablespoon oil and add a little (half teaspoon)  mustard and jeera seeds, once they splutter add chopped curry leaves
3) add 4 chopped green chillies fry and add 2 chopped onions and fry until translucent 4) add 1 inch grated ginger to this and a little turmeric and salt to taste 
5) add in the mashed potatoes and mix it all up 
6)add chopped coriander leaves to garnish.

Red Chutney powder 

Ingredients 
1) Peanut 1 cup, 
2) 8-10 garlic pods, 
3) 1 teaspoon coriander seeds, 
4) tamarind a little, ( ball the size of half a small lemon)
5) byadagi menasinakai 6-8 
6) and salt per taste. 

Method 
1)In a pan dry roast peanuts, 
2)take a little oil and fry the red chillies, coriander seeds, tamarind and garlic-one after the other. 
3) Let all of the ingredients cool down before you put them in the mixie jar...and blend, 
4) once completely fine add the peanuts you dry roasted earlier to the blender and make a coarse powder. 
5) Lastly add salt per your taste

Pudina Chutney (mint chutney) 

Ingredients 
1) Pudina leaves 1 bunch
2) green chillies - 4
3) coriander leaves - half a bunch
4) curry leaves - 1 handful
5) 1 cup of grated coconut, 
6) little tamarind ( size little bigger than a pea)
7)garlic 4-5
8) onion - half
9) and a handful of puttani (roasted Chana dal)

Method
grind in the mixer and add salt per taste and its ready.

Coconut Chutney 

Ingredients
1) freshly grated coconut 1 cup
2) a little  tamarind ( size of peanut)
3) roasted Channa dal 1 tablespoon (puttani), 
4) green chilli -2 numbers
5) salt, ginger half inch and water as needed

Method - blitz all ingredients in a mixer and ready!

Masala Dosa
1) spread the dosa batter with a help of a ladle on the hot tava/griddle in a circular motion.

2) now, add 1 tablespoon ghee on the dosa
3) add 1 teaspoon red chutney powder and aloo masala in the dosa,

4) once the dosa roasts well,  fold the dosa on either side and serve with coconut/mint chutney!
