Couscous and chickpeas salad

Couscous and chickpeas salad - It's a delicious and nutritious salad. It goes well with baked fish or chicken by the side!

Recipe

Ingredients:
1) couscous 1 cup, 
2) hot water 2 cups, 
3) boiled chickpeas 1 cup, 
4) salt and pepper to season 
5) coriander a few sprigs (you can use any herb),
6) ginger half inch grated,
7) half a lemon,
8) extra virgin olive oil.

Method: 

1) soak couscous in hot water and cover (1:2 measure) for about 4-5 mins, couscous will be ready to use. Please use a Fork to fluff it up... If you feel it's watery drain and rinse in cold water.
2) In a pan fry onions in olive oil until translucent,  add ginger,  boiled chickpeas, pepper, salt,  mix well to this add our prepared couscous and mix well for about 2-3 mins.
3) At this point switch the stove off and add the chopped coriander and squeeze in half a lemon. Voila! It's done!

Please note:
- this is a very basic one and you can serve it with baked fish or chicken.
- you can also add chopped feta cheese,  avocado, tomatoes, olives, pomegranate, capsicums or a bowl of mixed roasted veggies to this salad to make it a meal by itself.
