Banana Bread

Banana bread - this super moist loaf is easy to make and goes great with a cuppa anytime of the day! It is so versatile that you can create your own versions of it based on what you like to add ( raisins, cashews, almond, walnut, coconut, chocolate, chopped prunes..., list goes on)

We discuss 2 types of Banana bread today! 

1) Chocolate Chip Banana Bread.
2) Coconut Walnut Banana Bread.

Chocolate chip banana bread 

Ingredients:

All purpose flour 1 cup
Almond flour 1 cup 
( if you do not want to use almond flour, you can use half cup all purpose flour instead, so for the whole recipe you use 1 and half cup all purpose flour)
Sugar 1 cup ( if bananas are sweet, then reduce the sugar accordingly)
1 teaspoon baking soda
1/4 teaspoon salt 
1 teaspoon orange/ lime zest (optional , instead a teaspoon of good vanilla extract will do nicely too)
2 large eggs
1/4 cup butter or coconut oil
2-3 overipe bananas
1 cup chocolate chip ( or grated coconut)
1/2 cup chopped walnuts

Recipe:

1) in a bowl mix 1 cup all purpose flour,  1 cup almond flour, 1 cup sugar, 1 teaspoon baking soda, 1/4 teaspoon salt and 1 teaspoon orange/lime zest and mix.
2) beat 2 large eggs add 1/4 cup butter/oil , add 2 overriped mashed bananas, 1 cup chocolate chips 



3) Mix dry and wet ingredients in folding motion and pour into greased pan and top it with some chopped walnuts
4) bake in a preheated oven at 180 degrees C for 60 to 70 minutes ( until a toothpick inserted comes out clean) , if the top is browning too quick cover with aluminum foil and bake.

5) okay now for the hardest step - Cool completely before you cut a slice 😅!

P.S :  you can substitute chocolate chips with grated coconut, lime/orange zest with vanilla extract and butter with coconut oil for a very delicious Coconut Walnut Banana Bread!
