Simple Tossed Salad 



Salads always spruce up any plate - be it breakfast, lunch or dinner. They are notoriously versatile and could mean a lot of different things to a lot of people... But one thing is for sure, they can never be boring !!
Here is my recipe for a simple tossed salad... You can add or remove a few ingredients to make it your own !




Ingredients (serves 4)

Iceburg lettuce - half bunch
Yellow and green capsicum - half each
Cucumber 1
Tomato 1
Feta cheese 50 gms
Mixed seeds (sunflower, melon, sesame, chia)
Walnuts 8-10
Boiled eggs 4

For dressing 
 
Olive Oil 3 tablespoon
Lemon juice 1 table spoon
Salt & pepper

Recipe:


1)Its simple and straightforward ... Firstly wash the lettuce and pat dry on kitchen towel. Once dry cut the lettuce.
2) wash, cut and deseed tomatoes and slice them
3) cut capsicums, cucumber into bite size pieces.
4) put all these in a large salad bowl and toss well.
5) cut feta cheese into small chunks and add
6) sprinkle 2 tablespoon of mixed seeds.
7) chop walnuts and sprinkle over the salad and toss everything again
8) in a small container take 3 tablespoons of extra virgin olive oil, 1tablespoon of freshly sqeezed lemon juice, add salt and pepper to season ... Now close the lid and give it a good shake! Your salad dressing is ready to be poured over the salad and toss well
9) lastly cut boiled eggs , sprinkle salt and pepper on them and garnish your salad ! Serve with toast.
10) this salad is perfect as a light summer lunch / brunch by itself !
