Ladoos - are these cute, round quintessentially Indian dessert made of flour, ghee and sugar and oh boy! we have a ton of different types of ladoos from all across India! They are usually named based on their main ingredient... like Rava ladoo, Besan ladoo, Peanut L, Coconut L, Mewa L, Ragi L, Atta ladoo and so on...
One of my all time favorite has to be the Besan Ladoo (Chickpea flour). It was always this one that I frequently requested my mom to make, growing up, apart from Gulab Jamun and Gajar halwa ofcourse! So much so, that a box of these were a part of my bridal and baby shower too as an inside joke between mom and me 😃

Recipe
Ingredients
Besan flour (chickpea flour) 2 cups (250 gms)
Sugar 1 cup
Ghee 1 cup
Green Cardamon Powder 1 teaspoon
Chopped nuts (almonds, cashew )
Handful of raisins
Method
1) In a thick bottomed pan take 1 cup ghee and let it melt and heat up.
2) Once the ghee is hot turn the flame to low and add 2 cups besan flour and combine well and roast the flour on medium heat.
Please note that you need to buy a coarse chickpea flour from your grocer which is made specially to make these laddus, however, if you do not have the coarse one you can simply add 2 tablespoons of rava to your regular besan flour to give it a texture.
3) Besan will soak up all the ghee at the beginning and once you continue to roast on medium flame it will slowly release a little ghee. Continue to roast the besan until its colour changes to a golden hue and turns fragrant. This takes time and patience and continuous stirring. Turn the flame off once you reach this point.
4) In a mixer jar powder the sugar and green cardamon together.
5) add the sugar and cardamon powder to the besan-ghee mixture and mix well. Add the chopped nuts and raisins too and combine.

6) let this mixture cool further (5-6 mins) before you make them into small ladoos.

7) grease your clean palm with ghee and start to form the ladoos when the mixture is still warm to touch but not hot. You can mold them into ladoos quite easily pressing them between your palms. However, if you find that they are not easy to work with you can add 1-2 tablespoons of ghee additionally to the mix and form the ladoo
