Vegan Curry
Vegan curry - vegetables in coconut milk and rice - easy weekday lunches ❤

Recipe:

1) take 1 tablespoon coconut oil in a deep pan ... Add 1 bay leaf, 2 cloves,  1black cardamon and 1 green..  To this add 1 finely chopped onion and fresh ginger about 2 inches finely chopped and 2 green chillies slit... Saute
2) now add in all the veggies you prefer (I added broccoli, mushrooms, carrots, beans, peas, potatoes and handful of baby spinach leaves) and saute
3) add turmeric powder, black pepper powder, Garam masala powder and salt... Mix well and close the lid allow veggies to cook a bit
4)once veggies are almost done, add thick coconut milk (I used the tinned one as I was running out of time,  you can extract fresh coconut milk and use only the first press)
5) now lower the heat and let it simmer and come together.. Finally garnish with coriander leaves (I have skipped the coriander leaves as I did not have any at the time :-) )
6) serve with rice
