Seviyan Kheer/Vermicilli Kheer

Kheer is simply one of the most easy to make and delicious Indian dessert ever...that, birthdays back home are incomplete without it.

There are so many variations to this versatile dessert, like for instance, vermicelli can be replaced by rice, poha, certain millets, lentils, pasta....so you get my drift, the list is long and every household has their own take on this classic!
Here is my take on kheer 👇🏼
Recipe
1) slow roast vermicelli in a dollop of ghee (clarified butter) until it turns a golden brown, set aside
2) roast some chopped cashews and raisins in the same pan, set aside.
3) heat 1.5 ltr full cream milk until it reduces to about half it's original quantity
4) add in the vermicelli and keep stirring for about 2-3 mins, now add 170g of condensed milk and let it simmer
5) add a pinch of saffron strands and half a teaspoon of cardamon powder.
6) lastly add in the fried cashews and raisins, garnish with almond flakes and saffron.
7) Kheer tastes best when served chilled!
