Hummus and falafel

- hummus is a classic among Middle Eastern delicacies and goes great with falafel as well and it's a favorite at my household ❤
Recipe:
1) Soak two big cups of chickpeas / kabuli Channa overnight
2) take half the soaked Channa and boil in pressure cooker for hummus, and the other half is used for falafels
Falafel
Ingredients
1) 1 onion chopped,
2) 4 garlic pods,
3) 1 Bunch parsley leaves chopped (if coriander leaves are available you can use that instead too),
4) jeera seeds 1 tablespoon,
5) salt,
6) a little soda(to make them fluffy, optional)
7) overnight soaked chickpeas/ channa
Method
1) In a mixer add 1 to 6 from ingredients and run the mixer.
2) Lastly, add to this mix, the soaked chickpeas/Channa and run the mixer again to get a coarsely ground mix.
3) Shape these into little balls and deep fry to a golden brown (do not add water)

4) Hummus -
Ingredients
1) white sesame seeds - 4 tablespoon (white till seeds),
2) garlic 4 pods,
3) boiled & strained Channa
4) juice of 1 lemon,
5) salt to season
6) 1 cup extra virgin olive oil
Method
1) In a mixer add all the ingredients listed above and blend (do not add water, use additional olive oil if needed) - hummus is ready!
2) Once you transfer it to a bowl add 1 tablespoon of olive oil on top so it does not dry out. You can sprinkle some paprika powder if you like.
And just like that a classic hummus and falafel is ready to be served!!
There is a certain joy in making dishes from scratch without the use of store bought sauces and canned products and you feel so good to serve it to your family!
