Goli baje
Crisp on the outside and soft inside..these deep fried delights go good with coconut chutney and a cup of chai anytime of the day !
P. S Sorry did not get a chance to plate up and take a pic... , they vanished before I could do that 😅...my "gone too soon... Goli Baje! "

1) take 4 tablespoon sour curds add a little sugar and salt (as per your taste) to this and whisk.
2) to this, add 1 cup maida (plain flour) and 1 tablespoon rice flour and make a batter it should be a thick batter... You can add a little water if needed
3) leave aside for fermenting (for about 2-3 hours)
4) now to the fermented airy batter add finely chopped - green chilli's, fresh ginger, fresh coconut, curry leaves, coriander leaves, a little roasted jeera, half teaspoon hing and a pinch of soda. Mix the batter.
5) heat oil on medium flame, once hot drop this batter in the oil... You will notice that they puff up shaping themselves and rise up in the oil..
6) once golden brown get them out onto a tissue and serve with coconut chutney and tea.
