If your kids are anything like mine, they already know the theme for their next birthday and the very fancy fondant cake they would want to go with it! I have always outsourced their birthday cakes, cookies, cake pops and whatever else that goes with the theme... Because I'm not that artsy with fondant and wouldnt want to ruin the whole theme 😀. Having said that, I still bake a cake for them every year to celebrate at home at the stroke of midnight and since it's their birthday I frost it too!
So here are my 3 easy peasy homemade frosting for those celebratory cakes at home 👇🏼 (this habit came in handy this year with my daughter's birthday falling during the Covid-19 lockdown and I ended up baking both the cakes, usual midnight one and the other!)
First one is Chocolate Ganache - this is a very easy,  no fuss frosting and you can use it for your cakes,  donuts,  cookies,  cake pops and cupcakes. Recipe - a) over a water bath melt chocolate (any milk or dark chocolate 16 oz ) b)  once the chocolate melts get it out of the steam and add hot, 8 oz heavy cream and whisk until smoothe, 2:1 ratio c) now add 1 tablespoon honey and whisk (hand whisk is good) until it's shiny and smoothe d) you can pour this over cakes,  dip donuts,  cake pops.
You can also :
1)cover this with a plastic film and let it cool for 4 hours and then whisk again to incorporate a little air and make it light, you can pipe them to decorate your cupcakes.
2)you can also let them cool off overnight or for 6-8 hours, after which you can use it as a chocolate spread!
Watch out for butter cream frosting next post! #keepingitsimple #justhomemade #wholesome
