Quiche


Quiche


This is such a beautiful dish, I can't think of a nice brunch without quiche!  You can serve it warm or cold and it's so very versatile!  Again you could get super creative with this one with your choice of veggies, protein or cold meats! Today let's look at the recipe for

1) Spinach and Feta Cheese and also a
2) Mushroom and Chicken one,

Recipe 👇🏼

for Crust 
1) add a little salt to 1 cup plain flour and take 2 tablespoon of cold butter and rub it into the flour, the flour should roughly have a crumbly sand like texture to it 
2) now add 2 tablespoon of ice cold water, and bring this dough together... 
3)Place it in a cling film and let it rest for 2 hours
4) roll the dough to the size of your pie dish and place it in the dish and press it down on the sides and the middle, now make holes using a fork 
5) place some dried beans or rice on a baking paper and place in on the crust and bake at 160 C for 20 minutes ( it's to weigh the crust down so it does not raise) 
6) take the weight off the crust now (dried beans/rice) and let it bake further 10 minutes at 160 C ( let the crust get a light golden hue)

For Quiche 1 Filling 
1) in a pan sweat 1 small onion in butter, 1 garlic pod minced, add washed and chopped spinach and sautee
2)now add crumbled feta, sun-dried tomatoes and also season with salt and pepper.

For Quiche 2 Filling  
1) in a pan sweat 1 small onion in butter,  add 1 garlic pod minced, some peas and carrots,  now add mushrooms and chicken and sautee 
2) add salt and pepper and season well.

Egg custard

1)beat 4 large eggs in milk or cream add a little salt and pepper to season
2) In quiche crust 1 and 2 place filling 1 and filling 2 respectively and pour the egg custard until about half the dish is covered (we do not want it to overflow while baking),
3) add grated cheese ( cheddar, mozzarella or any that you prefer) and bake at 160 C for 20-25 minutes. According to your oven the time may differ,  look for a lovely golden brown on top.
4) Let it cool down a little before you slice. Serve with a side of any salad. I have garnished below with a little siracha sauce.
