One pot Chicken Pulao

Chicken Pulao

This is your answer, when you want a quick fix for your desi cravings ❤ 
(PS: this is not biryani, I will be posting that recipe soon 😀)

Recipe:

1)wash and soak 3 cups of basmati rice for 5 mins,  drain the water and leave the rice to rest
2)marinate chicken with red chilli powder,  turmeric,  salt and curds 2 tbsp
3) make a paste of ginger ,  garlic and green chillies
4) take a thick bottomed vessel add 3 tablespoon ghee,  3 tablespoon oil , to this add whole spices (bay leaves. Star anise, green cardamom, black cardamom, cloves , Javathri)
Hack: I add a Lil bacon at this point as it helps in getting a smoky flavour to the dish... It is optional and you can skip this step
5) 3 big onions chopped goes in now,  once it turns a lil brown ...add the 3 big tomatoes chopped,  add the ginger garlic chilli paste next and saute.
6)add turmeric powder,  pepper powder,  dhaniya powder, Shahi Garam masala powder (Everest), kasuri methi and salt and saute
7) add marinated chicken, mix it well and cover the pot and let it all come together... Marinated chicken will cook in its own juices, however,  if needed can add a cup of water at this time. Once the chicken is about 80 percent cooked
8 ) add the washed rice mix well,  3 cups rice will need 4.5 cups water (basmati always 1:1.5 ratio).
9) once the rice is cooked half way through... Cover the lid and decrease the flame to low for about 15-17mins
10) your one pot chicken pulao is ready... Garnish with chopped coriander leaves (can add fried onions, cashews, chopped Pudina/coriander additionally)
11) serve with boiled egg,  lemon wedge and cucumber raita!
