Continuing my previous post on Kharabath and Kesaribath, I couldn't miss mentioning the MTR style Kharabath using Vangi Bath Masala powder (I will make an elaborate post on all the different types of masala powders sometime soon!) - namma oorina iconic restaurant's iconic dish always makes my tea o'clock a very happy one some 7000 kms away from home !!
Recipe :
It's the Kharabath recipe from my previous post itself but enhanced with the addition of half a tablespoon of vangi bath powder.
1) dry roast 1 cup semolina (Bombay rava)
2) in a wok add a little oil, add quarter teaspoon mustard seeds and jeera seeds once they splutter add curry leaves, finely chopped green chillis (3), grated ginger(1inch) and fry. Now add finely chopped onion(1large) fry until translucent and add finely chopped tomato(1).
3) Add finely chopped french beans(half cup), carrots (half cup) and peas(half cup) and fry. Add half a teaspoon turmeric powder, 1 tablespoon vangi bath powder, half teaspoon cinnamon powder and salt to taste and fry.
4) To this add 3 cups of water and let it boil...when vegetables are cooked and water is simmering,add 1cup of roasted semolina while stirring frequently and close the lid for 2 minutes.
5) now add 2 tablespoon ghee mix it in. Garnish with grated coconut, chopped coriander and fried cashews (optional).

6) I have paired it with some raw banana chips here.
